The Unicorn of Jerky

It’s always amazing to watch people try Biltong for the first time. Reactions are all across the board. We hear proclamations like, “OMG it tastes like steak”!, “That’s a completely different experience than Jerky”, “It’s so flavorful”!, “I’ve never tasted anything that good in my life”!. We get a lot of questions about how it’s made, what’s in it, where can I get more.

But about 10 years ago when we were just fooling around at home with our recipe, one of our kids’ friends came over. We were cutting the Biltong, and he asked what it was. We told him (as we tell everyone), “it’s like beef jerky…but way better….try some”!

He picked up the beef bite and evaluated the red interior. He put it to his nose and smelled the toasted coriander mixed with spices procured from our South African heritage. He took a half-bite revealing the tender almost “medium-rare” center. He put the rest of the morsel in his mouth, chewed it up, swallowed it. HIs eyes lit up as he grabbed a handful and stuffed it in his mouth. "

“What IS that!??? UNICORN MEAT”?!?!, he yelled.

As we died laughing, we understood how unique the flavor profile, the consistency and and the mouth-watering instant created an instant addiction. We also realized how deprived most people are of eating regular, dehydrated, nitrate-filled, fake-smoked jerky most of us are accustomed to that a tender, air-dried beef bite can open your palate to something so delectable.

We’re not here to knock beef jerky. We truly appreciate all beef snacks. But there truly isn’t a comparison beyond that.
